Ingredients:

  • 3 ripped bananas

  • 1 cup soy milk (or any other plant milk)

  • 1/2 cup coconut butter (melted)

  • 1 1/2 cups buckwheat flour

  • 1/2 cup rice flour

  • 2 tsp xanthan gum(optional, but adds more crumble texture)

  • 2 tsp baking powder

  • 2/3 cup sugar (or any other sweetener)

  • 2 extra bananas for decoration (optional)



Method:

Step 1: In a large bowl mash 3 ripped bananas, and mix in the soy milk along with melted coconut butter.

Step 2: Add in the buckwheat flour, rice flour, baking powder, xanthan gum, sugar and salt. Mix everything together into a semiliquid dough consistency.

Step 3: Preheat the oven to 180C.

Step 4: Transfer the batter into a brownie baking tray. Decorate with bananas.

Step 5: Bake for around 50-55 min. (until the toothpick comes out almost clean)
