Contrary to popular belief, buckwheat is not a grain; it’s actually a fruit seed related to rhubarb, which makes it perfect for the gluten-free lifestyle.

For one ¼ cup serving of dry flour, buckwheat packs in 4 grams of both fiber and protein.

Studies have shown that buckwheat flour helps slow down the rate of glucose absorption after a meal, controlling blood sugar, which reduces the risk of diabetes.

Buckwheat flour is a gluten-free complete protein, perfect for vegetarian or vegan diets. By being a complete protein, a serving of buckwheat has the full spectrum of amino acids, the equivalent of animal protein in quality.

In a single serving of buckwheat flour, there is more than 10 percent of the daily value of magnesium, phosphorus, manganese and copper. Both magnesium and phosphorus help build strong bones and teeth, while manganese stabilizes blood sugar, and copper aids in the production of red blood cells.*source
