Mexican food always makes me happy, because it is so nourishing delicious and spicy!
Taco potatoes are going to drive you straight to a crowded street food place, you will absolutely feel the spirit of Mexican food.
And of course, the potato is the main hero of this place.
Along with the potatoes, you will have the recipe for a side salad which is so easy to make.

6 medium-size potatoes
4 tsp of fajita spice (I will post the homemade recipe for it really soon)
1 tbsp chopped parsley
1/2 cup shredded vegan cheese (85 gr.)
2 tbsp. olive oil
2 chopped green onions
0,5 tsp salt
0,5 tsp black pepper
2 ripe avocados (medium size)
1 small onion
2 tbsp of lemon juice
Salt and black pepper
Step 1: Wash potatoes and make some holes with a fork.
Step 2: Place them in a microwave on high degrees for 5-10 minutes until they soften.
*Or place them in the preheated oven at 200C and bake until soften(around 40 minutes).
Step 3: Meanwhile mash avocados with a fork and add in a medium bowl along with chopped onion and lemon juice, salt, and pepper. Set aside your side salad is ready.
Step 4: Then potatoes are cooked, cut them in halves and with a spoon take off the insides of the potatoes and place them in a medium bowl. *Try not to damage the shell of the potato you need it for your taco.
Step 5: Mash the potatoes in a medium bowl, then place in oil, half of the shredded cheese, fajita spice and chopped green onions. Mix them all together add in salt and black pepper.
Step 6: Place this mixture into potato shells and sprinkle with the rest of the cheese.
Step 7: Place them in a preheated to 200C oven or in a microwave for a couple of minutes. (2-3min in the microwave and around 7-10min in the oven).
Step 8: Serve Taco potatoes with a side salad for even better taste.
